In stances with 5 skills you can max all but one skill, the last skill will not be able to go higher than 8 if its a single point skill or 5 if its a 2point skill. The only exceptions are characters who have skills that overlap in different stances. In those cases you can safely take an overlapping skill up to level 6 and finish leveling it in another stance when you run out of points.
